Veggie Sushi Rolls

Veggie Sushi
My husband and I love sushi, but since I'm vegetarian I just make the veggie style ones. I will say this ones are a combination of a California roll and "whatever veggie" I have at home.

You will need:

For sushi rice:
2 cups of rice (it's usually made with sushi rice, but I just had Jasmine rice and it worked too)
1/2 cup of rice vinegar
2 tsp salt
1/4 cup sugar

First cook the rice (I always use my rice cooker for that), in this case you do want to add a little more water so the texture of the rice is stickier.

Meanwhile in a separate pan put the rice vinegar, salt and sugar and bring to boil. Let it cool, set a side.

When the rice is done let it cool down a little. Poor it into a large bowl and carefully add your vinegar combination, I add it a tablespoon at a time so it doesn't get "drowned" in liquid.

Rolls
1/2 medium size finely chopped zucchini
1/2 carrot peeled and sliced (I used the peeler to make the slices too)
1 small avocado, sliced
4 sheets of nori
3 tbsp toasted sesame seeds.


First place the nori sheet with the shiny part facing down.

On top of that put rice, spoon by spoon, making sure that it's getting compacted. Sprinkle the sesame seeds on top of that and then flip that "prepare sheet" upside down, so the nori sheet it's on top now.

Place your veggies in one side of the sheet, and then roll it, always pressing it so it keep it together.

Once your rolls are done, with a very sharp knife cut them in bite size rolls.

We like to eat them with pickled ginger, soy sauce, wasabi paste and teriyaki sauce.

Lentels on monday

Tonight's dinner For a reason that I don't really know,  in Peru is almost a tradition that you will have lentils on Mondays.  It's supposed to bring you good luck, money and prosperity for the week. I really have no idea how it all started, but that's one of the traditions that's still practice in most of Peruvian houses. As a kid, on Mondays you won't even bather ask the "mom, what's for dinner" question. Because you knew what it was going to be the answer. I am not a great lentils fan, but they are "good for you" and my hubby just loves them so once in a while I embrace the Monday's tradition. "Quinotto" with Lomo Saltado

Well this is a combination of Quinua, Rissotto and "Lomo Saltado". It was a great mix. Very easy and fast to make. Lomo saltado is a traditional dish from Peru, it's a beef dish with homemade fries, onions, tomatoes and spices. I did my version of it with whole mushrooms and half artichoke hearts. "Quinotto" 1 cup of quinua 1/2 cup of arborio rice 1/2 yellow onion 1/2 tbsp unsalted butter 3 cups of vegetable stock 1/4 cup of dry white wine. First boil the Quinua in a pot, once it's cook, rinse and drain it. Set a side. In a separate pot gold the onions in butter, add the arborio rice and stir it until it changes color. Add the white wine and keep stirring, once it starts boiling and getting dry add the vegetable stock little by little until it gets creamy, when the rice is fully cook, add the quinoa and mix them together.
