You will need
2 cups old fashioned oatmeal
1/2 cup toasted wheat germ
2 tbsp unsalted butter
2/3 cup honey
1/4 cup non process brown sugar
2 tsp vanilla extract
1 cup dry cherries
1 cup sliced almonds
1 cup chopped walnuts
Preheat oven to 350.
Prepare a 12 X 8 in baking tray with parchment paper
Bake the oatmeal on a sheet pan for 10 - 15 minutes, stirring at least every 5 minutes, until lightly browned. Transfer to a large mixing bowl and stir in wheat germ.
Reduce oven temperature to 300 F
In a small saucepan, combine butter, honey, brown sugar, vanilla and salt: bring to a boil over medium heat. Cook stirring, for 1 minute, then pour over the toasted oatmeal mixture.
Add dry cherries, almonds and walnuts. Stir until blended.
Pour into the prepared pan, pressing into an even layer. Bake for 25 - 30 minutes, or until light golden brown.
Let cool completely (about 2-3 hours). Cut into 2 in squares.
