Green Bean Salad

I bough this huge bag of green beans at Costco. Great flavor and price, but as I told you before in my house is just my husband and I so I have to get 1000 ways to make this green beans.
I was looking in all my recipe books about different ways to serve them, and in one of the books that my aunt Judy gave me the first year I became vegetarian I found this recipe, but as always I made some changes, so this is the recipe I came up after all of that.

Green Bean Salad:

2 "handfull" of green beans
1/2 of iceberg lettuce
1 cup of cherry tomatoes
1 tablespoon of gold raisins
1 tablespoon of pine nuts.

Dressing

1 Lime (squeeze all the juice)
2 tablespoons of olive oil
2 oz of blue cheese
1 clove of garlic (peeled and crushed)
1 tablespoon of white wine vinegar
Salt and pepper

When I do my salad dressings I usually use a glass container to put everything inside and give it a "good shake" after that, then let it sit for a little so all the ingredients fuse together.

To do this salad:
First trim and clean the beans, and steam them in with a little of sea salt, or you also can boil them in a slightly salted water  for a couple of minutes until they are just cooked. Drain them and let them cool down.

Put in a bowl all the other ingredients and sprinkle the pine nuts at the time of serving.

Italian/Peruvian Style veggies - "Mondonguito" a la italiana

I really need to explain this dish. Originally it's call "Mondonguito a la Italina". Mondongo is the peruvian word for  "cow stomach". Remember "cow-cow" dish?, well is the same part of the animal. Lentels on monday

Tonight's dinner For a reason that I don't really know,  in Peru is almost a tradition that you will have lentils on Mondays.  It's supposed to bring you good luck, money and prosperity for the week. I really have no idea how it all started, but that's one of the traditions that's still practice in most of Peruvian houses. As a kid, on Mondays you won't even bather ask the "mom, what's for dinner" question. Because you knew what it was going to be the answer. Mushroom Stroganoff with lime salad

Mondays and Wednesdays I have a late Zumba class, yes I teach Zumba, it's not only a great workout but it's also a great place to find great people. After my class I'm really hungry, and since I can't eat anything before my class, because if I do my body is too busy trying to digest and complains about the workout in very different ways;  I usually fix dinner before I go to class so I don't get home and "eat my way through cooking dinner". Last night I made this Multi-mushroom Stroganoff. I serve it with rice and a onion-avocado-tomato salad. My grandma and mother used to make chicken Stroganoff pretty often at my house and I loved it, but now that I'm vegetarian I look for different ways to have a similar flavors in my home.
